1shotespresso or 1 espresso pod or 1 tsp ground coffee mixed with a little hot water to dissolve
50gdark chocolate, melted
15g milk chocolate, melted
250ml(1 cup) whipped cream, or can of whipped cream
Instructions
Preparing the latte glasses:
Grate the milk chocolate onto a small plate. Set aside.
Melt the dark chocolate using a double boiler or microwave. Tilting the glass slightly, pipe, or drizzle with a spoon, the chocolate onto the inner walls of the glass creating large drips in both glasses.
Using the back of a spoon dipped in the dark chocolate, rub along the rim of the glass till the surface is covered. Dip the glasses, rim side down, into the plate of grated milk chocolate you prepared earlier.
Preparing the drink:
In a saucepan, add milk, peanut butter, coconut sugar and espresso. If using ground coffee, mix coffee with a little hot water to dissolve the coffee before adding to the pan. If using a coffee pod, prepare this first before adding.
Heat on medium-high heat, stirring to mix the peanut butter with the other ingredients until smooth. Continue to heat the milk until it is almost boiling. There should be steam coming off the milk, but no bubbling. Decrease the heat if necessary.
If the milk doesn't look completely combined with the peanut butter after heating, blend using an immersion blender or a hand-held frother.
Pour the mixture in the glasses. Pipe whipped cream on top and decorate with swirls of melted dark chocolate and sprinkle with the leftover grated milk chocolate. Serve immediately.
